Duck a l’orange
Duck breast full of orange flavor. This combination is so good. I can also recommend you to serve this orange sauce with a whole roasted wild duck.
Serves 2
Ingredients:
4 duck breast
1 orange
2 dl orange juice, fresh
1 tsp lemon juice, fresh
1 tbsp honey
Fresh thyme
0,5 tsp cinnamon
Pomegranate
Salt and freshly ground pepper
Directions:
In a pot, mix orange juice, lemon juice, honey, fresh thyme, cinnamon, salt, pepper. Let it boil on low heat for about 10 min, while whisking a few times. Let it boil into about half the size.
Clean and trim the duck breasts. Sprinkle with salt and pepper. On middle heat fry the duck breasts for about 3-4 min. on each side. Set aside and let it rest for 8-10 min.
Slice the duck breast and it should be light pink, not rare. Pour the orange sauce over the duck, sprinkle with fresh thyme leaves and add some fresh sliced orange. Great to serve with boiled potatoes or a green kale salad.
